It’s 5 am, and the house is dark and quiet because everyone else is still asleep.Even the cats are still in an early morning haze. Or maybe they’re worn out from being up all night.Not me though. I’m sitting here in the recliner in some kind of Whole30 state of healthy alert bliss because I just discovered that I can follow the Whole30 plan, have my lattes and drink them too. <3<3

This Paleo & Whole30 Cinnamon Vanilla Latte is so creamy and frothy, you will thinkyou just ordered the “real” thing at Starbucks, minus the questionable ingredients, minus the $5 price tag. Can I get a woop, woop??

The vanilla bean powder looks a little pricey, but a little goes a loooong way,and this stuff will last you forever.Don’t go overboard on your vanilla bean powderand cinnamon. You don’t want a bunch of vanilla bean particles all up in your froth.

**Edited 1/30/20** Buy HEY! – Vanilla extract is now Whole30-compliant! Per the official Whole30 website,

“Vanilla Extract and Other Botanical Extracts: Yes.Alcohol-based botanical extracts (like vanilla, lemon or rosemary) are allowed during your Whole30 program. These extracts are used to boost flavor in food and beverages and also to preserve certain food products, like meat.”

When using a blender to mix the ingredients, you don’t need a fancy milk frother. The coconut milk will froth right up and float to the top of your mug like you meant for it to happen. You should know that many blender manufacturers recommend against blending hot liquids. This is because the heat causes expansion and worst-case-scenario, your blender could explode. Now, I’ve never had this happen, obvi, but please read your blender instructions and proceed at your own risk. Definitely don’t fill your blender to full capacity with hot liquid.

Edited 1/30/20: ✅ I doubled the recipe but kept the number of servings at 2. Yes, that doubles the calorie count for each serving, but it's more realistic considering each serving is only 14 oz, about the size of a standard coffee mug. If you're fine with a 7oz. serving, just cut the recipe in half. 🙂 ✅ I added an option for vanilla extract since it is now Whole30-compliant (woohoo!). The vanilla powder still works, but it is pricey and can be grainy in drinks. ✅ I changed my blender recommendation due to the increased recipe size. Since the time of this posting, I purchased a Ninja blender and absolutely love it to pieces! ✅ I changed the prep time from 5 minutes to 10. By the time you brew coffee and heat the coconut milk, you're gonna need 10. ✅ I added a YouTube video of the recipe - go check it out! ✅ I updated the pictures (because please, those were just awful) and refreshed the post content a little.
