I can always eat a big salad as a meal. One of my favorite dishes is a blend of fresh veggies, cool greens, and a warm protein - such a simple and comforting combination!

Green Goddess Chopped Salad is brimming with freshness and bright, herby flavors. This is a great meal prep salad, it stays crunchy and flavorful for several days in the fridge.

Ingredients

Salad

  • 1 whole cauliflower, trimmed, cored and finely diced
  • 3 small cucumbers, finely diced
  • 4 green onions, peeled, ends removed, and chopped
  • 3 cups kale, chiffonade / finely chopped
  • 2 cups cooked quinoa

Dressing

  • juice of 1 fresh lemon (about ¼ - ⅓ cup)
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 4 cloves garlic, peeled
  • 1 shallot, peeled
  • 3 tablespoons capers
  • 1 cup spinach
  • ½ cup fresh basil
  • ½ cup fresh parsley
  • ½ cup fresh dill
  • ⅓ cup pumpkin seeds
  • 1 tsp salt

Instructions

  1. Wash your vegetables and chop them finely.
  2. Add all prepped vegetables and quinoa to a large salad bowl.
  3. Add all dressing ingredients to blender jar. Blend until completely smooth.
  4. Pour dressing over the salad and combine well.
  5. This salad is ready to serve immediately, and is even better after even just one hour of resting to develop flavors.

You can keep the salad in the fridge in an airtight container for up to 3 days.

This vegan recipe is dairy, gluten, and nut free.

Adding quinoa to the salad makes it more hearty so that it can be served as a main meal or side dish.

      good eye, Kelsey! I really do mean cauliflower. I know my video and photos show cabbage, because I used to make it that way. I almost exclusively make it with cauliflower now, which I like so much better, and I have had feedback that others prefer it too.
